Born in Trinidad and raised in Central Florida, Chef Amanda Currie cooks at the crossroads of the Caribbean and the American South. Her food celebrates the bold flavors, stories, and traditions she grew up with—sun-soaked beaches, Sunday family feasts, and the joyful chaos of a busy kitchen.
Guided by a deep love for cooking and culinary heritage, Amanda is especially drawn to fresh seafood and whole-animal butchery. She delights in breaking down a fish, working with beautiful cuts of meat, and transforming simple ingredients into vibrant, layered dishes. Heat and brightness are signatures of her style—she’s rarely without a homemade hot sauce, a squeeze of citrus, or a handful of fresh herbs.
